Original 9/24/27: This historically was a Christmas dish. A swan is just a big duck with a nasty disposition!
UPDATED: Since I posted the above so long ago, I have actually been swan hunting. We got swan tags in a Midwest state and we shot some swans.
Here is the recipe for roasted swan: Get a piece of 1X12 pine board; clean and soak your swan in brine; stuff said swan with olive oil soaked breadcrumbs mixed with apples and oranges; season to taste; tie the swan to the plank with stout cords; bake in the oven at 350 degrees for 4 hours; remove from oven and let sit for thirty minutes; sever the cords, throw away the swan and eat the board.
